Method

  1. Heat the oven

Heat the oven to 350°F and melt the coconut oil.

  2. Prep the apples (10 min)

Peel the apples, cut them in half, and scoop out the cores with a spoon. Slice into ¼-inch slices.

  3. Season the filling (2 min)

Grate the ginger into a large bowl. Add the apples, ¼ cup coconut sugar, vanilla, 1 tsp salt, and lemon juice. Toss and let it sit while you make the topping.

WhyThe sugar and salt pull juice out of the apples, and that juice becomes the sauce as it bakes.

  4. Make the topping (3 min)

In a second bowl, mix the oats, almond flour, cinnamon, the rest of the coconut sugar, and 1 tsp salt. Stir in the melted coconut oil.

Ready whenIt clumps when you squeeze a handful. If it is dry and sandy, add water 1 tbsp at a time.

  5. Assemble and bake (45 min)

Divide the apples between the two skillets and cover evenly with the topping. Bake for 45 minutes.

Ready whenThe topping is deep golden, the juices bubble around the edges, and a knife slides easily into the apples.

  6. Serve

Serve warm, straight from the skillet, with vanilla ice cream or whipped cream.

Make it cheffy

Toast the oats first

How

Toast the oats in a dry skillet over medium heat for 3-4 minutes, stirring often, then let them cool before mixing the topping.

Why

Toasting brings out a deeper, nuttier flavor and makes the topping extra crunchy. You will know it is right when they smell nutty and look a shade darker.

Swaps

  • Coconut sugar → brown sugar.
  • Coconut oil → melted butter.
  • Topping browning too fast? Cover loosely with foil for the rest of the bake.
  • Topping sandy and will not clump? Add water 1 tbsp at a time.

Make ahead & storage

Make ahead

Mix the topping up to 2 days ahead and keep it in the fridge.

Storage

Cover and keep up to 3-4 days in the fridge. Reheat at 350°F for 10-15 minutes to re-crisp the top.
