Method
Heads up
Read the whole recipe once first. Heat the oven to 350°F, grease the baking dish with butter or cooking spray, and melt the butter so it cools slightly.
Mix the dry ingredients (3 min)
In a large bowl, stir together the oats, flaxseed, flour, collagen, baking powder, baking soda, cinnamon, and salt.
Mix the wet ingredients (3 min)
In a second bowl, whisk the applesauce, milk, eggs, maple syrup, and melted butter until smooth.
WhyMixing wet and dry separately spreads the baking soda and powder evenly, so there are no bitter pockets.
Combine (3 min)
Pour the wet ingredients into the dry and stir until no dry spots remain. Fold in the chopped apples. Spread evenly in the greased dish.
Bake (35-40 min)
Bake at 350°F for 35-40 minutes.
Ready whenThe edges start to brown, the middle does not jiggle, and a toothpick in the center comes out clean.
Cool and slice (10 min)
Let it cool for 10 minutes so it firms up, then cut into squares. Serve warm with a splash of milk, a spoonful of Greek yogurt, or a drizzle of maple syrup.
Make it cheffy
Brown the butter
How
Instead of just melting the butter, cook it in a small saucepan over medium-low heat, swirling often, for about 4-5 minutes. It is ready when it foams, turns golden brown, and smells nutty. Take it off the heat right away.
Why
Browned butter adds a toasty, caramel flavor that pairs perfectly with apples and cinnamon.
Swaps
- Milk → any milk you like.
- Maple syrup → honey.
