Baked egg bites with greens in a muffin tin

Method

  1. Heads up

Heat the oven to 350°F and grease the muffin tin well with cooking spray or butter.

  2. Blend (1 min)

Blend the egg whites, eggs, cottage cheese, salt, pepper, and paprika until smooth.

Ready whenThere are no cottage cheese curds left.

  3. Chop and fold in (5 min)

Chop the kale, potatoes, and sausage into small pieces. Stir them into the egg mixture.

  4. Fill the tin (2 min)

Pour the mixture into the greased muffin tin, filling each cup about ¾ full.

WhyEgg bites puff up in the oven. Leaving room keeps them from spilling over.

  5. Bake (25 min)

Bake at 350°F for 25 minutes.

Ready whenThe centers are set and do not jiggle, and a knife in the middle comes out clean.

  6. Cool and release (5 min)

Let them cool 5 minutes, then run a butter knife around each edge and pop them out. Serve 2-3 with fruit, or tuck into a toasted English muffin.

Bake with a water bath

How

Set a baking dish filled with 1 inch of hot water on the rack below the egg bites while they bake.

Why

The steam cooks the eggs gently, so you get the silky, custard-like texture of sous vide egg bites without the special equipment.

Swaps

  • Chicken sausage → turkey bacon, ham, or leave it out for vegetarian.
  • Kale → spinach, peppers, or scallions.
  • Stuck to the pan? Next time, grease more generously or use silicone cups. For now, loosen them with a thin knife.
  • Rubbery texture? They were overcooked. Pull them out as soon as the centers set.

Make ahead & storage

Make ahead

Bake a batch and keep them ready for the week.

Storage

Airtight container in the fridge up to 4 days. Freezer up to 2 months, wrapped individually. Reheat in the microwave 30-45 seconds (from frozen, 60-90 seconds), until hot in the center.
