Method
Roast the sweet potatoes (25-35 min)
Heat the oven to 425°F. Cut the sweet potatoes into 1-inch cubes, toss with a little oil and salt, and roast in a single layer, flipping halfway. Short on time? Roast them whole instead; they just take longer.
Ready whenBrowned at the edges and fork-tender.
Meanwhile, make the sauce (3 min)
Blend the cottage cheese, tahini, maple syrup, lemon juice, garlic powder, paprika, salt, and pepper until smooth.
Make the green bean side (10 min)
Sauté the green beans for 5-7 minutes, until soft on the outside but still crunchy on the inside, then cool them. Toss with the capers, garlic, feta, red pepper, cucumber, dill, lemon juice, and the red wine vinegar. Season with salt and pepper.
Build the bowls (5 min)
Add sweet potatoes and chicken to each bowl, spoon the sauce over, sprinkle with feta, and serve the green bean side next to it.
Make it cheffy
Blanch and shock the green beans
How
Boil the green beans in well-salted water for 2-3 minutes, then plunge them into a bowl of ice water for 1 minute. Drain and pat dry.
Why
The beans stay bright green and snappy, and salting the water seasons them from the inside.
Swaps
- Roast chicken → rotisserie chicken (the easy route) or any cooked chicken.
- Feta → goat cheese.
