Make it cheffy

Smash the beef for more crust

How

Put the beef in the hot pan as one big patty and press it flat. Let it sear without moving for 3-4 minutes, then flip and break it apart.

Why

Leaving it alone builds a deep brown crust, and those browned bits are where the flavor is.

Swaps

  • Ground beef → ground turkey or chicken (cook to 165°F).
  • Soba → rice or rice noodles (gluten-free, if you also use tamari).

Make ahead & storage

Cook the noodles and chop the vegetables ahead.

Storage

Store the beef and vegetables separately from the noodles in the fridge up to 3-4 days. Reheat in a skillet or microwave until steaming. Serve the noodles cold or warmed.
